Slow Cooker Cranberry Chicken

Cook: 5-6 hrs low, 2.5-3 hrs high

Makes: 6 servings

Ingredients:

  • 2.5-3 lbs chicken things and/or drumsticks, skinned
  • 1 16-oz can while cranberry sauce
  • 2 Tbs dry onion soup mix
  • 2 Tbs quick cooking tapioca
  • 3 cups hot cooked rice or couscous

Directions:

  1. Place chicken in a 3.5-4 quart slow cooker. In a small bowl stir together cranberry sauce, dry soup mix, and tapioca. Pour over chicken.
  2. Cover and cook 5-6 hrs low, 2.5-3 hrs high. Serve over hot cooked rice.
