Stuffed Baby Bella Caps

Ingredients:

  • 1 lb medium fresh Baby Bella
  • 1/4 cup onion, chopped finely
  • 1/4 cup crumbled bleu cheese
  • 2 Tbs dry bread crumbs
  • Salt & pepper to taste

Directions:

  1. Remove stems and chop. Cook stems in a pan with onion until tender (not brown).
  2. In a medium bowl combine Baby Bella mix, bleu cheese, bread crumbs, salt, and pepper.
  3.  Fill caps with mixture, and dip into fresh parsley. Place on a baking sheet and bake at 375 F for 10 minutes.
