Ingredients:
- 1 lb medium fresh Baby Bella
- 1/4 cup onion, chopped finely
- 1/4 cup crumbled bleu cheese
- 2 Tbs dry bread crumbs
- Salt & pepper to taste
Directions:
- Remove stems and chop. Cook stems in a pan with onion until tender (not brown).
- In a medium bowl combine Baby Bella mix, bleu cheese, bread crumbs, salt, and pepper.
- Fill caps with mixture, and dip into fresh parsley. Place on a baking sheet and bake at 375 F for 10 minutes.
