Ingredients:
- 2 or 3 small to medium cucumbers, peeled and sliced very thin (use a mandolin)
- 1/4 cup vinegar
- 1/2 cup sugar
- 1/2 cup cold water
- 1/2 tsp salt
- dill weed
- parsley (dried or fresh, chopped)
Directions:
- Slice cucumbers and place in bowl. In a separate bowl, add other ingredients and mix until sugar dissolved. Pour over cucumbers.
- Best if served after one or two days in refrigerator
