Ingredients:
- 2 lbs Tilapia filets
- Old Bay Seasoning (Gloria suggests lemon pepper)
- 2 tsp minced garlic
- 3 Tbs olive oil
- 4 Tbs butter
- 2 Tbs parsley flakes
- 4 oz Chardonnay wine (Gloria suggests dry vermouth)
- juice of 1/2 lemon
- a little dried basil
Directions:
- Sprinkle lemon pepper or old bay seasoning on both sides of fish and set aside.
- Heat butter and olive oil in a frying pan at about 250 F. Place garlic, parsley, and basil in pan and sautee for 1 minute.
- Add fish and cook for 3 minutes. Add wine and simmer for 3 to 4 minutes or until done.
- You can also use Codfish or Snapper filets with skin removed.
