Tilapia Filets

Ingredients:

  • 2 lbs Tilapia filets
  • Old Bay Seasoning (Gloria suggests lemon pepper)
  • 2 tsp minced garlic
  • 3 Tbs olive oil
  • 4 Tbs butter
  • 2 Tbs parsley flakes
  • 4 oz Chardonnay wine (Gloria suggests dry vermouth)
  • juice of 1/2 lemon
  • a little dried basil

Directions:

  1. Sprinkle lemon pepper or old bay seasoning on both sides of fish and set aside.
  2. Heat butter and olive oil in a frying pan at about 250 F. Place garlic, parsley, and basil in pan and sautee for 1 minute.
  3. Add fish and cook for 3 minutes. Add wine and simmer for 3 to 4 minutes or until done.
  4. You can also use Codfish or Snapper filets with skin removed.
