Fat Free Fudge Brownies

Ingredients:

Two brownies on a gingham napkin
  • 1/3 cup unsweetened cocoa powder
  • 2/3 cup unbleached all-purpose flour
  • 2/3 cup sugar
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1 tsp dry instant coffee dissolved in 1/3 cup boiling water
  • 1/3 cup skim milk
  • 2 1/2 oz jar baby food pureed prunes
  • 1 1/2 tsp vanilla extract
  • 2 egg whites
  • confectioners sugar for dusting (optional)

Directions:

  1. Preheat oven to 350 F.
  2. Spray an 8 by 8 inch pan with Pam. Set aside.
  3. Sift cocoa powder into a large mixing bowl. Add the flour, sugar, baking soda, baking powder, and salt. Mix well.
  4. Add liquid ingredients to the dry ingredients. Mix well.
  5. Pour the prepared batter into the pan and bake for about 30 minutes, or until a knife inserted in the center comes out clean.
  6. Allow the brownies to cool in the pan on a rack for 10 minutes and then invert it onto a serving plate. Allow the brownies to cool completely before cutting them into 16 squares.
  7. Dust the top of the brownies with confectioners sugar. Makes 16 brownies.
