Classic Potato Salad

Ingredients:

  • 1 cup Hellman's real or light may
  • 2 Tbs vinegar
  • 1 1/2 tsp salt
  • 1 tsp sugar
  • 1/4 tsp pepper
  • 4 cups cooked, cubed, peeled potatoes (5-6 medium)
  • 1 cup sliced celery
  • 1/2 cup chopped onion
  • 2 hard boiled eggs, chopped
Directions:

  1. Combine first 5 ingredients. Stir in remaining ingredients.
  2. Cover. Chill.
  3. Microwave directions: in 1 1/2 quart microwave casserole combine cubed potatoes and 1/4 cup water. Cover. Microwave on high stirring once, 8 to 10 minutes or until tender. Drain. Continue as above.
