Greek Style Chicken Salad

Ingredients:

  • 1 can (10 oz) Valley Fresh Premium Chunk White Chicken, drained, cut into bite size pieces
  • 1 cup crumbled Feta cheese
  • 1 3.25 oz can sliced ripe black olives
  • 1 cup grape style tomatoes
  • 1 cup diced cucumbers with peel
  • 1/2 cup sliced red onions
  • 3 cups cooked tricolor Rotini pasta, chilled
Dressing:
  • 1/2 cup olive oil 
  • 1/2 cup white wine vinegar
  • 1 Tbs lemon juice
  • 1 tsp minced garlic
  • 1 tsp dried oregano leaves
  • 1/2 tsp salt
Directions:
  1. Combine pasta, chicken, vegetables, cheese, and olives. 
  2. Mix together dressing ingredients.
  3. Pour dressing over pasta mixture and lightly toss until coated with dressing. Chill until ready to serve. 
Serves 6-8
