Ray Samuels's Shrimp Mousse

Shrimp mousse in a round mold with heart shape on top
Ingredients:

  • 2 envelope of unflavored gelatin
  • 2 cans TINY shrimp (4 1/2 oz can)
  • 1 can tomato soup
  • 1 cup mayo
  • 1/2 cup chopped pepper
  • 1/2 cup onion
  • 1/2 cup celery
  • 1 8-oz cream cheese
Directions:
  1. Drain shrimp - save juice
  2. Dissolve gelatin in shrimp juice, add tomato soup and heat just below  boiling.
  3. Cool in refrigerator completely
  4. While mixture is cooling, chop the pepper, onions, celery. Add mayo and shrimp and dash of salt.
  5. Mix all well in large bowl
  6. In blender, put cooled soup and cream cheese - blend at high speed and pour over shrimp mixture. Mix.
  7. Oil mold - add mixture - refrigerate at least 4 hours
  8. UNMOLD & ENJOY!
