Tofu Deviled Eggs

Ingredients:

  • 1 dozen eggs, hard-cooked
  • 10 oz tofu, drained
  • 3 Tbs spicy brown mustard
  • 1Tbs reduced calorie mayonnaise
  • Paprika, if desired
Directions:
  1. Remove shells from eggs. Slice eggs in half lengthwise, remove yolks and discard.
  2. Place tofu in large bowl. Using a fork, mash tofu into small bits. Add mustard and mayonnaise; mix well. 
  3. Stuff into egg whites. Top with paprika, if desired. Serve chilled
