From Gloria's recipe card box
Ingredients:
- 1 dozen eggs, hard-cooked
- 10 oz tofu, drained
- 3 Tbs spicy brown mustard
- 1Tbs reduced calorie mayonnaise
- Paprika, if desired
Directions:
- Remove shells from eggs. Slice eggs in half lengthwise, remove yolks and discard.
- Place tofu in large bowl. Using a fork, mash tofu into small bits. Add mustard and mayonnaise; mix well.
- Stuff into egg whites. Top with paprika, if desired. Serve chilled
